Mom's Sausage Potato Skillet

I remember the first time my mom whipped this concoction together. My brother and I were starving and I don’t think she had any idea what to fix for dinner. She just started looking around the house at what we had and this recipe was the outcome. Let me tell you, it was a hit!!

My brother and I still both make this recipe today with rave reviews from both our significant others!

This recipe is super easy to make, very frugal (I think per serving this costs me under $ 1.00) .Makes about 5-6 servings (we eat big servings in our household!)



Mom's Sausage Potato Skillet:

2 Chicken Sausages, cut into 1 inch pieces (I get my at Trader Joes, they are all natural chicken and ingredients)
3 Large Organic Russet Potatoes, sliced (remember potatoes are high on the Dirty Dozen)
1 Medium Onion, Sliced in rings
2 Large Peppers – Red or Yellow sliced
¾ Cup Water
2-3 Tsp Cajun Seasoning (optional – my family is from the south!)
OR
Salt to taste
Pepper to taste
½ tsp chili powder

In a large skillet brown the sausage. Once the sausage is browned add the Potato, onion, pepper and water. Cover and cook over medium heat for 15 minutes (or until your potatoes are tender)

While this is cooking, turn your oven to Broil.

When your potatoes are tender, transfer contents to a lightly greased cookie sheet, spread the ingredients evenly. Sprinkle your seasoning on the top and broil for 5 minutes.

This will help the potatoes and veggies get nice and crispy!

  3. I don't know why I haven't commented before but I love this recipe and have made it several times! Give your mom a big hug next time from all of us that love her simple flavorful recipe!
