Ahhh… Fall is upon us! Fall is my favorite season, hands down! I love the changing of the leaves, the cool nights, the sweaters and boots and all the holidays! Thanksgiving, my birthday, even “Halloween” (even though we don’t celebrate Halloween it’s a great time to get involved at your local churches Harvest Parties or to spread Christ’s love to the trick-or-treaters, I will blog about that closer to Halloween!). I think that my favorite part of fall is that it means that CHRISTMAS is getting close! (I will forever have child-like excitement about Christmas)
Another thing I love about fall? The food that is in season! Squashes, pumpkins, apples, potatoes, Soups, the list goes on and on! I am so excited to begin cooking this season!
This weekend I had three large Roaster Chickens that I decided to make chicken broth with. I had used some of the meat in my freezer meals for my mom, and with one I made Apple Roasted Chicken, I took the remainder of the meat off the bones and yielded almost a whole gallon bag full of shredded chicken! I put that chicken in my freezer for future use! All in all, these chickens made me 8 meals so far, not including the remaining chicken in my freezer and not including the 5 GALLON BAGS FULL of homemade chicken broth I was able to make out of the carcasses of the chickens! Talk about frugality!
One of the recipes I made with the shredded chicken was Chicken Quinoa Soup, and oh man! it is so good! It screams “fall”! There is nothing like a warm bowl of hearty soup on a cold fall evening!
Chicken Quinoa Soup:
2 Cup Shredded Chicken (or cubed)
1 Cup Uncooked Quinoa (make sure you rinse your Quinoa before using, to remove the bitter taste)
4 Carrots, diced
3 Celery Stalks, diced
½ medium Onion, diced
2 Cups water
3 Cups Chicken Broth
1 Tsp Thyme
1 Tsp Basil
1 Tsp Sea Salt (depending on the saltiness of your broth, you can omit this)
Pepper to Taste

Put all ingredients into your crockpot. Cook on high for 4 hours or low for 8 hours. Your chicken can be cooked or uncooked, it does matter! It will cook in the crockpot.
This delicious hearty meal lasts us for days! Such a wonderful frugal treat!

I saw this on Tempt Your Tummy Tuesday. I join that blog link often but there are so many people involved that I guess I haven't seen your blog before. I cooked quinoa once in soup and it wasn't very good. I didn't know about washing it first. I am new to quinoa...ha. My daughter found that she has Celiac's only recently. We are trying lots of new things. I have a new Tuesday recipe link up too. It is just beginning and small (not to mention that I don't know what I am doing..ha) It is called Tuesday's Tasty Tidbits. Love to have you join. We could use some healthy recipes. Anyway, I am trying this one you posted tomorrow. It sounds like a good replacement for chicken noodle.

ReplyDeleteIf you don't like the taste of Quinoa, you could substitute it with Brown Rice! It would be just as good!
